The Crolly Distillery, nestled in the picturesque village of Croithlí in County Donegal, stands as a beacon of Irish whiskey heritage and craftsmanship. Established in a beautifully restored stone building dating back to 1902, the distillery is the first licensed whiskey producer in the region since 1840, reviving a long-lost tradition of whiskey-making in Donegal. The distillery crafts exceptional single malt Irish whiskey using time-honored methods, including direct-fired pot stills sourced from the Cognac region of France. Each whiskey is carefully matured in ex-bourbon casks and finished in virgin oak casks, with an emphasis on exploring unique wood species to create distinct and memorable flavors. Visitors can immerse themselves in the art of whiskey-making with guided tours, where they will learn about the distillery’s history, production techniques, and dedication to quality, concluding with a tasting of their premium offerings.
